Chicken Tortilla Soup

Ingredients

  • 1 lb skinless, boneless chicken breast cut into 1 inch pieces
  • 3.5 cups chicken broth
  • 1 tsp ground cumin
  • 1/2 cup uncooked long grain white rice
  • 1 can (11oz) whole kernel corn w/red and green peppers, drained
  • 1 cup salsa
  • 1 tbsp chopped fresh cilantro leaves
  • 2 tbsp lime juice
  • 4 corn tortillas

Directions

  1. Spray 6qt sauce pot with cooking spray. Heat over medium heat for 1 min. Add chicken to sauce pot and cook until browned, stirring often.
  2. Stir in broth, cumin, and rice. Heat to boil. Reduce heat to low. Cover and cook for 20 mins. Begin prepping tortilla strips.
  3. Stir in corn, salsa, cilantro and lime juice. Cook until the rice is tender.
  4. Top each serving with crisp strips.

Crisp tortilla strips

Heat oven to 425deg. Cut 4 corn tortillas into thin strips and place on baking sheet. Spray with cooking spray. Bake for 10 mins or until golden.
